Description
Ossobuco or osso buco is Italian for “bone with a hole” (osso “bone”, buco “hole”), a reference to the marrow hole at the center of the shank. The meat cut in Beef Osso Bucco is a cross-cut of beef from the shank that’s around an inch and a half thick. It’s a pretty thick meat cut but it becomes deliciously flavourful and tenderized when braised.
